Lemon Drop — A Chili That Smells Like Lemon

Native to Peru and locally known as Ají Limón or Qillu Uchu, Lemon Drop belongs to the Capsicum baccatum species — the same lineage as Ají Amarillo and Ají Cristal. Its slender, translucent yellow pods carry a distinctive citrus aroma unmistakable even before the heat arrives. On the palate, the chili delivers a clean, front-loaded burn with a bright lemon-zest note that pairs particularly well with fish, seafood, and light acidic dressings.
